Garlic scapes are the edible, curly green flower stalks of hardneck garlic, offering a mild, garlicky flavor that's less pungent than cloves, and they are harvested in late spring/early summer. They can be eaten raw or cooked and are versatile enough to be grilled, roasted, sautéed, or blended into pesto, hummus, or compound butter, often substituting for garlic, scallions, or chives in recipes. When preparing, trim the tough bottom and leathery top, and blanching can help tenderize them.
How to prepare and cook
- Trim: Cut off the tough, woody bottom and the flower bud at the top.
- Blanch: Briefly boil (30 seconds) and then shock in ice water to make them tender and milder.
Cooking methods
- Grill: Toss with oil, salt, and pepper and grill until tender and charred.
- Sauté: Sauté with olive oil, salt, and pepper as a side dish or in stir-fries.
- Roast: Roast with other vegetables like tomatoes and onions.
- Blend: Make pesto, hummus, or a compound butter.
- Use raw: Finely chop and add to salads, eggs, or dips.
