Eggplant is a type of vegetable that belongs to the nightshade family, along with tomatoes, okra, and zucchini. It comes in various shapes, sizes, and colors and tastes similar to summer squash or zucchini. It is tender, sweet, and mildly flavored with a slight hint of bitterness. When cooked, eggplant absorbs the flavor of the ingredients it is cooked with. It can be prepared in many ways, such as marinating, pickling, grilling, braising, deep-frying, sautéing, stir-frying, and baking.
