Botanically, zucchini is a fruit, but it's treated as a vegetable. Its flavor is mild with just a hint of sweetness and nuttiness, which partially accounts for its versatility, making it a culinary blank slate. Zucchini is a versatile vegetable that can be used in both sweet and savory dishes. It can be grated and combined with fresh herbs and feta cheese for fritters, or mixed with cinnamon, sugar, and/or cocoa powder for breads and cakes. Slice it lengthwise, season it with salt, pepper, and olive oil, and grill it. It can also be roasted with other summer vegetables and fresh garden herbs. For a tasty meal, scoop out the insides and stuff it like a pepper, or layer it with tomato and cheese for zucchini parmesan. Additionally, zucchini can be pickled or dehydrated for later use.
